Healthy Peanut Butter Oatmeal Choc Bars

These are a healthy sweet treat and very simple and quick to make. The kids can help too and they are really filling so you can make them go a long way. A small square is enough with a cup of tea or coffee as the peanut butter is quite heavy

Ingredients

  • 1 cup natural unsalted peanut butter
  • 1/4 cup natural honey
  • 1 1/4 cup oatmeal
  • 150 grams quality dark chocolate
  • 2 tbsp peanut butter (optional)

Instructions

  1. Add 1 cup of peanut butter to a large microwaveable bowl. 

  2. Pour in the 1/4 cup of honey and mix.

  3. Put the bowl in the microwave for 15 seconds then mix some more.

  4. Prepare the chocolate by breaking into pieces in a metal bowl and put the bowl on top of a pot of around 2" of boiling water to melt it. 

  5. Keep stirring until almost completely melted then add in 2 tbsp of peanut butter (optional)

  6. Put the oatmeal mixture back in the microwave for a further 15 seconds and mix well.

  7. Prepare a dish with baking paper. I used a 30cm x 20cm size. Once that is lined with baking paper, pour in the oatmeal mixture.

  8. Flatten the mix down with a fork/spoon to make sure its not crumbly. Once that is packed into the dish/pan, pour over the chocolate mix and even out with a spoon.

  9. Once the oatmeal mix is covered, put the dish in the freezer for around 40mins until the chocolate has hardened and the mixture is set.

  10. Remove from the freezer once set and cut into pieces with a sharp knife. I used larger pieces but realised afterwards that they are really filling so smaller pieces are better.

  11. Enjoy with a nice cup of tea/coffee!

Recipe Notes

To make these even healthier you could add in some wheatgerm!
