Zucchini lasagne with parmesan in a dish

Tasty Zucchini Lasagne

This low carb pasta-free zucchini lasagne is healthy and tasty. The zucchini is a perfect replacement for carb loaded pasta and tastes the same!

Ingredients

  • 1 tsp olive oil
  • 500 grams lean beef mince
  • 1 medium zucchini/courgette sliced thin
  • 1/4 cup parmesan flaked/grated
  • 1 dash salt
  • 1 dash cracked pepper
  • 2 cups tomato purée
  • 1/2 medium yellow pepper chopped finely
  • 1 small packet of lardons/3 slices bacon chopped

Instructions

  1. Line and grease a baking dish with olive oil and zucchini strips to cover the base. Season the beef with salt and pepper.

  2. Cook the peppers, bacon and beef over a medium heat. Once the meat is cooked, add in the tomato purée. Now add the parmesan, leaving some over for the topping.

  3. Preheat the oven to 180. Once the meat and sauce are prepared, pour in a layer on top of the zucchini in the dish (I used half the meat). 

  4. Add another layer of zucchini and another layer of meat. Sprinkle a layer of the remaining parmesan on top.

  5. Pop it in the oven for 20 mins. Once cooked, remove from the oven and leave to cool for around 5 minutes or so.

  6. Serve with a light green salad.
