This creamy chicken quinoa dish is absolutely delicious. I was going to make this dish with rice or pasta originally and then I just happened to have some quinoa which was quicker so I used it instead. So glad I did, it tastes really amazing with it.
I discovered a similar recipe online but ended up making a few changes out of necessity since I didn’t have some of the ingredients. It is really an unusual kind of recipe but I had most of the ingredients in the house so I went ahead and compromised. To my surprise it turned out amazing!

Creamy Chicken Quinoa
A creamy chicken dish with a hint of spice and a delicious taste. It is perfect to have with quinoa.
Ingredients
- 2 medium chicken breasts
- 1 medium onion chopped
- 1 clove garlic crushed
- 2 tsp balsamic
- 1 dash salt
- 1 dash cracked pepper
- 1 pinch chilli flakes
- 1 sprinkle brown sugar
- 2 tsp butter
- 1/2 cup chicken broth
- 1/2 cup cream
- 1 tbsp olive oil
- 1 dash Italian herb mix
- 2 servings quinoa unflavoured
Instructions

Heat the oil in the pan on a medium-low heat. Add in the chicken and leave to cook on low heat, turning regularly.

Once the chicken is almost cooked through, add in the onions.

Once the onions are almost transparent, add in the garlic.

Season the chicken with the salt and pepper and add the butter.

Sprinkle on the herbs and chilli flakes. Have your chicken broth ready.

Add in the balsamic and sprinkle on the sugar.

Slowly pour on the chicken broth and mix it all well. Coat the chicken in the sauce and add in the cream.

Leave to simmer for the sauce to thicken. Prepare your quinoa and have it ready on the plates or bowls. Make a small hole in the middle for the chicken.

Add your chicken breasts to the dishes and pour the creamy sauce and onions over the top.

I tried this recipe with cous cous instead of quinoa the next day but it wasn’t as nice. Still tastes good but quinoa is definitely the best.
