This bacon and vegetable rosemary linguini is so easy to make, it requires very little effort and is quick to whip up. I came across the rosemary linguini in the Italian section at Lidl. I was surprised how much it tasted of rosemary but I really like rosemary so I enjoyed it. You don’t have to use the rosemary linguini but I think it gave it a nice flavour. If you can’t find it in the shop, just sprinkle some rosemary over the dish as it’s cooking in the pan.
The vegetables in this dish are courgette/zucchini, aubergine and red and yellow peppers. You can cook those beforehand if you want to make this really quickly or else just start cooking those in the pan while you prepare the rest. It is tasty, filling and healthy. A great family meal. My kids even devoured it which I was surprised at since I wasnt sure they would eat the rosemary linguini or the vegetables!
Bacon and Vegetable Rosemary Linguini
This quick and easy dish is tasty and healthy. A great meal for all the family. It is very filling too.
Ingredients
- 4 servings rosemary linguini/plain
- 1 tsp olive oil
- 1/2 small yellow pepper chopped small
- 1/2 small red pepper chopped small
- 1/2 medium zucchini/courgette chopped small
- 1/3 small aubergine chopped small
- 1 small packet of lardons/4 slices of bacon chopped
- 3 tbsp tomato pasta sauce
- 1 sprinkle fresh parmesan grated
- 1 dash salt and cracked pepper
Instructions

Boil water on the stove and add linguini with a pinch of salt. Cook as per instructions (around 10-12mins)

Heat the olive oil in a frying pan on medium heat. Add in the vegetables. Cook until golden and soft.

Set aside the veg in the pan or remove altogether. Cook the bacon in the pan and add in the pasta sauce. Now mix in the vegetables.

Turn the heat down to simmer and add in the rosemary if you used plain linguini.

Once the pasta is cooked, taste it to make sure it is ready, then remove from the heat and strain in a pasta strainer.

Add the bacon and vegetable medley to the linguini and mix well. Add a dash of salt and pepper to taste and garnish with the sprinkle of parmesan.

Ready to serve immediately. Enjoy!
