After making this Garam Masala curry from scratch I am never making the jar bought curry again! It is so much more flavourful and potent when you make it from scratch. I am glad I decided to use my own spices since I haven’t really used them for a while. I love a good curry, especially when the cooler weather creeps in. I have to say, I will be cooking with spices more often from now on after this.
If you prefer a hotter curry, then add in some more chilli flakes, maybe an extra teaspoon or so. You can taste it and judge for yourself but I like the medium hot curry so this was perfect for me. It isn’t too mild or too hot so I really love the subtle taste with a spicy kick to it. Either way, this curry is adaptable!
Garam Masala Curry from Scratch
A delicious and flavourful curry made from scratch with lots of spices. This is quick and easy to make and tastes way better than the shop bought jars of curry!
Ingredients
- 2 medium chicken breasts sliced into small pieces
- 1 medium yellow/red bell pepper chopped small
- 3/4 cup full fat cream/coconut cream
- 1 tsp cardamom ground
- 1 tsp turmeric
- 1 tsp ground ginger
- 1 level tsp chilli flakes
- 1 dash nutmeg ground
- 1 tsp coriander
- 1 tsp cumin
- 1 tsp paprika
- 1 tbsp salted butter
- 1 sprinkle parsley to garnish
Instructions

Fry the chicken in butter over medium heat until cooked through. Preheat the oven to 200°

Mix together all the spices in a bowl. Sprinkle half on the chicken in the pan, mix it in and save the rest. Set aside.

Transfer the chicken to a baking dish. Now mix in the cream to the remaining spice mix. Pour in the chopped pepper.

Pour the cream, spices and pepper over the chicken in the baking dish. Mix it all together and pop it in the oven.

Bake for 20mins and remove, then sprinkle on the parsley to garnish.

Serve alone or with rice/potatoes. Enjoy!
