I had been pondering what to blog about today since early this morning as i have so many things i want to share. Honestly, i have heard of writers block but this is the opposite! Thats when it came to me and i was enlightened with the perfect post idea which is this dreamy and tasty bacon, avocado and tomato salad! Top of the list priority. Heres how it was inspired..
My two babies were finally asleep at the same time and it was (is) pure bliss. Peace and quiet at last haha. I finally have a spare hour or so (fingers crossed!) to work on my blog. I sat down to begin and was stumped as to where i would start. All of a sudden i had so many ideas racing around in my head so i said, ok, its time to eat first and foremost since i was absolutely starving. Its hard to get a chance to feed myself with all the running around i do. I have a two year old and a two month old so you can imagine it gets a little crazy around here. To say the least. Help!!!
Anyhoo, in the midst of the routine madness i had forgotten to eat breakfast (again) and its now lunchtime, what the? where did the day go? Its 1.30pm and i haven’t eaten since yesterday. So i am really craving something yummy and nutritious. I had a few glasses of wine last night and I’m really feeling it today. Yawn. Im tired since i woke at 5am for no apparent reason, except maybe the wine. Cant blame the babies this time, in fact i was quite jealous of their sleeping faces as i lay awake this morn. Never thought id say that!
Feeling a bit sorry for myself i stalked over to the fridge. The usual staple pieces were there and as luck would have it i had some leftover salad dressing from the other day. Score! I decided to throw together my trusty favourite salad. Its simple and quick to make, tastes scrumptious and is really low cal. What more do you want?! Happy face.
And with that my blog post for today was settled. I haven’t put a recipe up here for ages so its about time i shared my awesome salad that i keep coming back to since i love it so much. The best part about it is, its practically guilt free and its surprisingly filling. Its probably the avocado. I normally won’t feel hungry again til dinner so thats a thumbs up for me since I’m always snacking here n there. Especially if i don’t have something filling for lunch. All the more reason to love this recipe.
The bacon i use is always smoked cos i like it to have that tasty kick that satisfies my craving for, well, bacon. If you’re vegetarian, in which case, excuse my raving on about bacon and opt for a nice tasty cheese instead. I have often used cheddar or Comté. Something with a bit of flavour and a bite.
If you happen to be vegan or neither takes your fancy, you could try balsamic vinegar as a dressing since that gives it a nice kick of flavour too. There are lots of things you can add to this salad which is why its a great go-to recipe and why i love it so much. A handful of cracked nuts can also work well, such as walnuts, almonds or pine nuts. All the better for the healthy goodness. Righto thats enough gushing on. After all it is only a salad, who knew one could go on about it so much…
INGREDIENTS FOR ONE PERSON:
1/3RD OF A MIXED/ICEBERG/ROMAINE LETTUCE
HALF AN AVOCADO
A HANDFUL OF BABY TOMATOES/ ONE SMALL/MEDIUM TOMATO CHOPPED
2 SLICES OF BACON CHOPPED/A HANDFUL OF LARDONS COOKED OR
VEGETARIAN OPTION: CHEESE SUCH AS FETA/CHEDDAR
BALSAMIC VINEGAR
OLIVE OIL
CRACKED PEPPER
DIRECTIONS:
CHOP OR BREAK THE LETTUCE INTO BITESIZE PIECES AND WASH
SLICE THE AVOCADO INTO BITESIZE PIECES
TOSS TOGETHER THE BACON/CHEESE/BOTH WITH THE TOMATOES
ADD EVERYTHING TO THE SALAD BOWL AND MIX WELL
ADD A GOOD DASH OF OLIVE OIL AND SOME BALSAMIC
A LITTLE CRACKED PEPPER
ET VOILA
OPTIONAL LOW-FAT GREEK YOGHURT CAESAR DRESSING: YUM!!
INGREDIENTS:
1 CUP OF GREEK YOGHURT
1/3 CUP OF GRATED PARMESAN
2 TSP LEMON JUICE
SALT AND CRACKED GROUND PEPPER
1-2 GARLIC CLOVES, CRUSHED
1 TBSP OLIVE OIL
DIRECTIONS:
IN A SMALL BOWL, MIX TOGETHER THE GREEK YOGHURT AND PARMESAN WITH A FORK
ADD LEMON JUICE AND MIX WELL
ADD THE GARLIC, DEPENDING ON YOUR PREFERENCE ( YOU CAN ADD MORE AT THE END IF YOU WANT THE EXTRA CLOVE) AND AGAIN MIX WELL
SEASON WITH A LITTLE DASH OF SALT AND SOME CRACKED PEPPER
FINALLY, ADD THE OIL UNTIL THE DESIRED CONSISTENCY IS ACHIEVED
