I happened to work part time in an Italian restaurant one time and I make a mean bruschetta. Here are 3 quick Italian bruschetta toppings for the perfect lunch or brunch.
The basics you need are bread, tomatoes, garlic and olive oil for the classic bruschetta base. I am incorporating avocado, mozzarella and basil since I decided to jazz it up a bit. You can use baguette or a loaf and it can be white or wholegrain. I like to toast mine but you don’t have to toast the bread if you are in a rush.
This is quick to whip together and tastes divine. A lovely healthy and tasty Mediterranean snack that fills you up!
3 Quick Italian Bruschetta Toppings
Classic Italian bruschetta with a little tweaking to make them even more enjoyable. I love these as a lunch or brunch and they are super quick to whip up. They are really healthy too 🙂
Ingredients
- 2 tbsp olive oil
- 2 large tomatoes chopped small
- 1 large garlic clove crushed
- 1/2 large avocado mashed
- 1 dash cracked black pepper
- 1 dash Himalayan pink salt
- 1/2 medium mozzarella ball sliced
- 2 small basil leaves
Instructions

Chop the tomatoes nice and small, similar to salsa and add to a medium bowl. Pour in the olive oil and mix.

Add in the crushed garlic and mix well. Add in the dash of pepper and salt and mix.

Toast the bread lightly (optional). Drizzle a little olive oil over the bread.

Add the tomato and garlic mix to 2 slices of bread. Now mash the avocado with a fork and add a little cracked black pepper and salt to taste.

Spread the avocado onto the remaining slice of bread. Top it off with the remaining tomato mix.

Chop the mozzarella into slices and place them on one of the tomato bruschetta slices. Garnish with the basil.

Recipe Notes
You can drizzle some balsamic vinegar over them for a little extra flavour if you like!
Grated fresh parmesan is a good choice too.
