
This summer berry oatmeal slice is so simple to prepare, I even enlisted the help of my 3 year old! She loves baking and she is becoming a dab hand at it. I try to include her whenever I can with the baking and I want to teach her to use more healthy ingredients so oats and berries are a great choice. There is some sugar in this but not too much so they are relatively healthy! I have yet to try making these with honey as a substitute as this was my first attempt at making them but if you try it, let me know how it goes.
They turned out soft and a bit chewy which is what I was hoping for and they were nice with a cup of tea. They didn’t last very long so thats a good sign I guess! Here is the recipe –
Summer Berry Oatmeal Slice
A nice one pan cake that is easily and quickly prepared. A nice sweet treat the family will enjoy and tastes great with tea or coffee!
Ingredients
- 2 cups oatmeal
- 1/2 cup brown sugar
- 5 sliced strawberries
- 150 grams blueberries
- 150 grams raspberries
- 1 large egg beaten
- 3 tbsp vegetable oil
- 1/2 cup granola
- 1 pinch salt
- 2 cups milk
Instructions

Add the oatmeal and sugar to a large bowl. Mix well, then add in the granola and pinch of salt.

Add in the chopped strawberries, blueberries and raspberries. Mix well. Preheat the oven to 180.

In a separate bowl, whisk together the egg and oil, then add the milk gradually to the egg mix.

Once that is ready, pour it gently into the bowl of oatmeal mix.

Prepare a baking dish by greasing it with butter.

Pour the mixture into the baking dish. Flatten it down to make it neat.

Even out the berries if they are unevenly distributed.

Pop it in the oven for 30-35 minutes. Once it is golden, remove from the oven.

Leave to settle for around 5 mins or so. Cut into squares or rectangles and use a spatula or similar to remove.

Ready to eat! Enjoy straight away or keep it for later/the next day or 2.

Best with a nice cup of tea or coffee. Add a little cream if you like!
We had fun making these so it is a great way to pass some time with the kids. The fact that it is baked in a pan means that they would probably be a good party snack when baking for a crowd. You can always play around with the recipe by adding chocolate chips or sweet spices. Do let me know in the comments if you try any different variations. I am sure to make these again.
