Creamy Bacon, Courgette, Shallots and Garlic Pasta

This is another go-to fave of mine. I always have the ingredients on hand and it is super quick. Tastes divine!

Ingredients

  • 1 tbsp olive oil
  • 1/2 large courgette/zucchini chopped small
  • 2 peeled shallots finely chopped
  • 1 clove garlic, chopped well
  • 200 grams penne pasta/similar
  • 1 dash cracked black pepper
  • 4 slices bacon chopped into small pieces
  • 100 mls cream

Instructions

  1. Heat the olive oil in a large frying pan on low-medium heat. 

    Put the pasta on to boil as per instructions on the pack. 

  2. Add the courgette pieces and cook til golden brown

    Then add in the chopped shallots.


  3. Once the shallots are transparent, add in the chopped garlic.

  4. Once the garlic is cooked, add in the cream and simmer for a minute.

  5. Add a dash of cracked pepper and remove from the heat.

  6. Remove the pasta and strain. Add the pasta to the frying pan and mix in with the creamy sauce.

  7. Fini! Devour.

Recipe Notes

This can also be made vegetarian by removing the bacon. You could add in mushrooms or leave as is!
