
This week I am experimenting in the kitchen again! We bought a watermelon the other day and I was trying to come up with something interesting that the kids would love as well as ourselves. I set about the idea of making a sorbet but then I don’t have a sorbet maker so I decided to go with ice-cream instead. I am on a diet at the moment and trying to cut down on sugar and fat so I didn’t want to use cream, condensed milk or loads of sugar. I knew I might need to add a little sugar for flavour so I looked up how to make low fat ice-cream. I found out that you can just add milk to whatever fruit you choose and then add in a little sugar or honey depending on your taste.
I decided to take a chance on it anyway, so I cut up a melon to use one half, sliced it into smaller pieces and put it in the blender. I went ahead and added a couple of teaspoons of sugar to make it sweeter for the kids. I probably would have tried honey but I wasn’t sure if the taste might overpower the watermelon so I will try that next time as it’s the healthier option. I gauged around 2 cups of milk for half a medium sized watermelon, roughly. I knew if it was too watery I could always add more chunks of watermelon later. The idea is to let it set by freezing it for around 4/5 hours, depending on your freezer or overnight in my case as I made it later in the evening.
After that, you take it out and blend it again in the blender. I have made frozen yoghurt in the past so the idea is similar. I took it out of the freezer the next morning and it had set around the top and edges but not fully. It was a bit slushy so I put it back in the blender and hit thickened a good bit. I decided not to add more watermelon at that stage and put it back in the freezer. I waited a couple of hours before going back to check on it. I was surprised to find it had set like a sorbet! It is a lovely refreshing watermelon ice cream like a sorbet. I decided to call it Refreshing Watermelon Ice Cream Sorbet because it is ice-cream but like a sorbet and it is so refreshing.
It is the ideal summer dessert and it is a lot healthier than some of the sugar-filled cream versions. I was delighted that the kids really enjoyed it and will be making this regularly from now on. It is really simple to make, even though there is a long wait for it to set. Just make it the night before and then leave it overnight or if you’re having a dinner party, you could whip it together that morning. A nice idea would be to serve your watermelon ice-cream sorbet with a wedge of watermelon and a slice of lime. If you blend it again, it can be made into slushies for the kids too. You could even make a cocktail with Malibu or similar for a nice frozen watermelon drink. All you need are a couple of ingredients. Hope you enjoy!
Refreshing Watermelon Ice Cream Sorbet
A lovely watermelon ice-cream sorbet which is cool and light so ideal for the hot summer weather. It is refreshing and simple to make.
Ingredients
- 1 half medium sized watermelon sliced/chopped
- 2 tbsp castor sugar optional
- 1 1/2 cup milk
Instructions

Put the watermelon into the blender. Add in the sugar (optional) and slowly pour in the milk.

Replace the lid and pulse until blended. It will be liquid with some lumpiness but no chunks.

Pour the mixture into a clean re-useable ice-cream container or plastic/metal pan with a lid which will fit in your freezer. See photos for the average size you need.

Replace the lid and put in the freezer for around 5 hours or leave it overnight as I did.

Once it has set around the top and sides, transfer the mixture back into the blender. Pulse until slushy again.

Return the mixture to the ice cream container and put it back in the freezer for a few hours. Once it has set to a sorbet-like texture, remove it and serve.

It keeps for a few weeks at least. It makes a lovely dessert or sweet treat. It can be used as a slushy drink if blended again once removed.
