
Last week I had the biggest craving for a berry tart. We had bought a summer berry tart the week previously and it was divine but we had polished the whole thing off so I needed to come up with a solution! By some miracle, I happened to have some frozen berries in the freezer. Stroke of luck!
Another lucky and complete coincidence was that I had a roll of pastry thawed in the fridge. It had been there at least a week so I guess it was a little soggy but still fine. The only reason it was thawed was because it came in a pack of 2 and I had only used one, then forgot about the other. Anyway, it must have been fate that I had the exact ingredients waiting for me. The easiest berry tart was literally the easiest tart on the planet to make!
Without further ado, I give you the easiest berry tart –
The Easiest Berry Tart
This is literally the easiest berry tart you will find! It is a great last minute dessert or pie for when you have guests or just feel like eating a berry tart. Yum with tea.
Ingredients
- 1 pack frozen/fresh berries thawed
- 1 roll pastry thawed
- 1 handful granola or similar
- 1 tsp butter for greasing
- 2 tbsp liquid honey
Instructions

Grease a round pie dish. Roll out your pastry and carefully place in the dish. Push it up against the sides and press in at the edges. Use a fork to prick the pastry on the base. It helps the pastry to breathe so it won't be soggy.

Preheat the oven to 200°. Bake the pastry for 5 minutes and remove. Put on a heatproof surface. Mix the honey with the berries in a bowl and pour on the pastry. Spread them evenly to cover.

Sprinkle on the granola and add extra if needed. Put the dish back in the oven and bake for around 25 minutes.

Once the edges are turning golden brown it should be ready. Depending on your pastry, check the instructions as it may need longer but keep checking on it.

Once baked, remove from the oven and leave to cool for at least 5 mins. Serve with cream or eat as is. Enjoy with a cuppa.
As you can see in the pictures, my pastry was very fragile but that was because it was thawed for so long before I used it. My 3 year old loved helping me make it. The frozen berries I used were for making smoothies so included bananas which gave it a different taste but the banana isn’t something I would normally use for this berry tart. It is sugar-free (apart from some sugar in the granola) so healthier than the sugar-laden kind and still tastes the same!
This is the easiest berry tart to make with very little effort and it is quick to prep. Hope you enjoy. By all means use fresh berries if you have them. It is blackberry season!
