Since i have been trying out new breakfast recipes with eggs, i decided to try these baked avocado with eggs. They were really nice and tasted different than what i expected. I love avocado and i enjoy eating eggs for breakfast so it was right up my street. They are really filling and keep you going till lunch.
Baked avocado with eggs are an interesting breakfast that can be made with various different toppings. Here are two of the ones i tried recently. I used tin foil to keep them balanced on the baking tray. This helped stop the egg from running over the sides when putting the tray in and out of the oven.
Baked Avocado with Eggs
Yummy baked avocado with eggs make a filling and tasty breakfast. They are low carb and can be made with various fillings.
Ingredients
- 1 medium avocado ripe
- 2 small eggs
- 1 slice smoked bacon/half pack of lardons chopped small + fried
- 1 dash Himalayan/sea salt
- 1 dash cracked pepper
- 1 tbsp cheese grated
Instructions

Heat the oven to 200°. Cut avocado in half and remove the pit. Prepare a baking tray with tin foil as per the pics below. Fit the avocado halves in so they are sturdy.

Crack the 2 eggs into egg cups or similar. Scoop out some more avocado to fit the eggs in. You may need to remove some egg white to fit the egg in properly.

Place the avocado halves in their tin foil mould on the baking tray. Pour in your eggs.

Season with salt and pepper then sprinkle on the bacon and/ or cheese.

Pop them in the oven carefully so as not to spill the eggs. Bake for 15 mins until the eggs are set.

Remove from the oven and serve immediately.
