Once the yolks are separated place them in a bowl and set aside.
Beat the egg whites until forming stiff peaks.
Line a baking tray with baking paper and heat the oven to 200°
Fold the parmesan into the egg white mixture. Place spoonfuls of the egg white mix on the baking paper and create a well in the middle of each for the egg yolks. (See pic for example). Bake those in the oven for 3-5mins until browning around the edges.
With a large spoon, remove each egg yolk and carefully place inside the wells of the egg white clouds. Season with salt and pepper.
Once that is done, pop the baking tray in the middle of the oven for around 10 mins until the egg has no filmy liquid left on top.
If you still see some clear liquid, then pop it back in for another minute or 2.
