These light and fluffy banana cupcakes are so tasty, they are hard to resist! Apart from being light and fluffy they are lovely and moist. I happened to try making them without eggs as I had ran out. Best move ever! They are perfect.
I had a little helper, my 3 year old so if she can do it anyone can! They take less than 10 minutes to prep so they are easy peasy. Try them yourself for a healthier, low sugar treat. Enjoy!
Easy Eggless Banana Cupcakes
These banana cupcakes are the bomb! Try them yourself and see. Easy peasy!
Ingredients
- 3 bananas
- 1/2 cup sugar
- 1/2 tbsp vegetable oil
- 1 tsp baking powder
- 1/2 tbsp water
- 1 tsp baking powder
- 1 1/2 cups plain flour
- 1/3 cup melted butter
- 1 pinch salt
- 1 tsp baking soda/bicarbonate of soda
Instructions

Mash the bananas well with a fork and add in the sugar.

Mix well. Then mix 1/2 tbsp of vegetable oil, 1/2 tbsp water and 1 tsp baking powder and add to the mixture. Stir well.

Combine the rest of the dry ingredients in a separate bowl.

Melt the butter and add to the liquid mix. Stir well, then add in the dry mixture gradually. Beat until smooth. It is ok to have some bits from the banana so don't over mix.

Pre heat the oven to 360. Prepare the muffin/cupcake tin/mould and grease if necessary or add paper cups.

Spoon the mix into the moulds nearly to the top but not at the top since they will rise.

Bake for 20mins until a toothpick comes out clean and there is a golden brown colour to the tops.
Recipe Notes
You can also add in some dark chocolate chips, chopped nuts or blueberries for another variation of this yummy recipe. Enjoy!
Here are some pics of my 3 year old having fun making these! It was a great way to introduce her to baking and she loved them so much she insisted on making them again the next day. They are a firm favourite in our house 🙂
