I love mushrooms, onions and bacon together and often use them in pasta. I happened to have some puff pastry in the fridge the other day and was wondering what to make with it for a change, since I usually buy it for my fave chicken pot pie. I had all my basic staples, ie bacon, onions, garlic and mushrooms at home and I just said why not try making a puff pastry tart? Here is how it went!
Tasty Mushroom Onion and Bacon Tart
This is a tasty and filling tart that is easily prepped, cooked and eaten! It doesn't really need a side to go with it since it is so filling but you can always have a side salad for a bit of green.
Ingredients
- 150 grams mushrooms chopped small
- 1 medium onion chopped small
- 1 small packet lardons or 4 slices of bacon chopped
- 1 roll puff pastry
- 1 sprinkle grated cheese
- 2 tbsp olive oil
- 1 clove garlic crushed/chopped finely
- 1 sprinkle fresh rosemary/thyme chopped small
Instructions

Heat one tbsp olive oil in a frying pan on low-medium heat. Preheat the oven to 180

Add in the onions and mushrooms and cook until the onions are transparent. Set aside

Heat the remaining olive oil in the pan on medium heat. Add in the bacon and garlic. Cook the bacon until slightly browning.

Prepare the pastry by rolling it out on the baking paper provided or if making your own just use a piece of baking paper. Place on the oven tray and curl in the sides slightly.

Mix together the onion, mushrooms, bacon and garlic and add to the pastry.
Sprinkle on the rosemary/thyme. Cover the pastry evenly and try to distribute it evenly.

Pop it in the oven for 12-15 mins. After 10mins, add the sprinkle of grated cheese over it. Check it after 12 mins to see if the pastry is hardened. If so, it is cooked.

Once that is ready, remove from the oven and leave to cool for around 3 mins.

Serve on a board or large plate and cut like a pizza or into squares.

It makes a great brunch, lunch or snack and is also great for parties as an appetiser. I made it for a party where everyone brought a plate and it was a hit. Can be made vegetarian by excluding the bacon and adding in extra mushrooms and some butter for extra flavour. If you make your own pastry all the better! You could consider adding some herbs into the pastry such as rosemary and thyme. Puff pastry is the best as it is just the right consistency. Managed to get my 3 year old to eat mushrooms too since she thought it was pizza.
