Here are my favourite 3 tasty ways to eat sweet potato –
1) Sweet potato mash. This sweet potato mash is so simple to make, it requires very little effort, freeing up your time to entertain or relax when preparing for lunch or dinner. It is spicy but not overpowering. Here is what you need –
1 x Sweet potato
A dash of each of these spices –
Cumin
Turmeric
Madras curry powder
Ginger
Cayenne
Cracked black pepper
Rock salt/Himalayan salt
Directions –
Pre heat the oven at 200°C. Wash the sweet potato and pierce with a fork all around. Bake the sweet potato in foil for around 30 mins or so, until cooked. Test it by cutting with a sharp knife. If it is soft on the inside it is cooked, if not, keep cooking at 200°C for another 5-10mins.
Once cooked, remove from the heat and leave to cool for around 15-20mins. Peel off the skin and dispose of it. Mash the sweet potato in a medium bowl until smooth. Add in the spices and seasoning a dash at a time, mixing well as you go.
Serve as a side dish or snack, warm or reheated in the microwave or a pot on the stove.
Simple but satisfying!
2) Stuffed baked sweet potato. This is a vegetarian and vegan dish and tastes delish. Bake the sweet potato as before – preheat the oven to 200°C and pierce with a fork. Bake for 30-40 mins until soft. I had some leftover vegetable medley from my recent bacon and vegetable rosemary linguini which I froze as leftovers. I decided to use the aubergine, red and yellow pepper, onion and courgette mixture as a topping. I threw it in the frying pan and it didn’t take long to fry up. It was a nice liquid texture after freezing which was ideal. If you cook the veg from scratch just add a little tomato purée to smoothen it for the topping. Here is what you need –
1x Sweet potato (baked and split in 4 quarters but intact) – see photos
1/3 of an aubergine
1/3 of a red pepper
1/3 of a yellow pepper
1/3 of a courgette (all chopped small)
1-2 tbsp tomato purée
A sprinkle of fresh rosemary (chopped small)
1/2 a ripe avocado
Directions –
Open up the baked sweet potato to add the filling/topping. Add in the fried veg medley mixture with a spoon.
Cut the avocado half into smaller cubes with a knife and scoop it out with a teaspoon.
Add the avocado as a garnish on top of the fried vegetable mix.
Add another small dash of cracked pepper, salt and finally a drop or 2 of olive oil on the side.
Enjoy!
3) Sweet Potato chips. One of my all time fave snacks which never fails to conquer a craving is this simple and tasty recipe for sweet potato chips. The kids love them too so they don’t last long and normally get devoured immediately! The great thing is, they are healthier than chips and they have a nice sweetness so all babies love them. Score all round! Especially handy when you are feeling like a healthy quick fix lunch, dinner or snack solution. Also, perfect for having guests over and entertaining as they make great appetisers and finger food. You can dip them in guacamole or similar for extra taste.
Here is what you need –
1 x large sweet potato, peeled and cut into small chips – see photo for a guide
1 tbsp olive oil
A good dash of cracked black pepper
A generous dash of Himalayan pink salt/rock salt
Directions –
In a medium sized bowl, add the sweet potato chips and pour on the olive oil
Mix the oil in well with a fork or spoon to coat all the chips. Shake the bowl to distribute.
Add in the cracked pepper and salt and mix well again.
Line a baking tray with baking paper.
Pour the chips on to the baking tray and spread out evenly.
Bake for 10-15 mins on 180°C, then turn the chips over once browning on one side or soft.
Bake for a further 5-10 mins and test. Once soft they are cooked.
Remove from the oven and transfer to a plate to cool down.
Serve with a dip or sauce as a side or snack.
