I made this creamy sun-dried tomato and mozzarella pasta dish for a dinner party one night and it was a massive hit. Everyone was asking me for the recipe and thinking I was some kind of kitchen genius haha. It is actually so simple and quick to whip up. Anyone can make this and if you don’t want to have it with pasta, you can make it with potatoes, like roast potatoes or cauliflower and it still tastes divine.

Creamy sun-dried tomato and mozzarella pasta

Creamy Sun-dried Tomato & Mozzarella Pasta

A deliciously creamy and rich dish with a hint of spice. This creamy sun-dried tomato and mozzarella pasta dish is unforgettable!

Servings 2 people

Ingredients

  • 2 medium garlic cloves crushed
  • 2 large chicken breasts pummelled to flatten
  • 1 cup sun-dried tomatoes in olive oil
  • 1 pinch cayenne/paprika
  • 1 pinch salt
  • 1 cup half and half (milk and cream) mixed
  • 1/4 tsp red pepper flakes/chilli flakes
  • 2 servings penne pasta roughly 4 cups (dry)
  • 1 sprinkle basil optional
  • 1 medium ball of buffalo mozzarella shredded/mashed

Instructions

  1. Heat a frying pan on medium heat, then add in the sun-dried tomatoes in oil and cook for a minute or so. Lower the heat to a simmer.

  2. Put the pasta on to boil in a pot, following the instructions on the pack. Pummel the chicken breasts to flatten them for faster cooking.

  3. Season the chicken breasts with salt and cayenne/paprika and add to the pan. Fry on medium heat until cooked through.

  4. Add in the crushed garlic and simmer for a minute. Now add in the half and half cream and water.

  5. Add in the mozzarella bits and turn the heat up to medium until it begins to boil. Now reduce it to a simmer again.

  6. Once your pasta is cooked al dente, drain it and have it ready to add to the pan or plates.

  7. Now add in the basil (optional) and red pepper/chilli flakes. Mix well and remove from the heat.

  8. Add your penne into the frying pan or if you prefer, put onto the plates and pour over the sauce. It works either way!

  9. Voila! Serve immediately. Enjoy...
